I am Beta vulgaris. I am notable for my sweetness--I have the highest sugar content of any vegetable, but I'm very low in calories. My sweet flavor comes through whether I'm fresh or canned. Unlike many other processed vegetables, I remain perfectly acceptable in both taste and texture when canned; when not pickled, my sweet flavor is largely unaffected by the canning process. As a fresh vegetable, however, I have twice the folate (folic acid) and potassium, and have a distinctive flavor and a crisp texture not found in my canned incarnations. When fresh, I also supply a nutritional bonus--my green tops are an excellent source of beta-carotene, calcium, and iron. Oh yeah, and I'm fucking delicious.
